This recipe for pizza eggs is my go-to recipe for when I am craving pizza or melted cheese. Seriously. It is SO GOOD. It takes only a few minutes, with some simple ingredients.

Because I am the only one on a ketogenic diet in my house it's great to have a keto pizza recipe that works for everyone. My kids are always wanting pizza and I have the hardest time resisting it. I have no will power when it comes to pizza.

Anything I can do to whip out a fast low carb pizza will keep me from cheating with a slice (or two) of their pizza. An easy keto pizza - perfect!

Why Use An Egg Crust?

Several reasons! Egg are full of protein and nutrient packed - much more than a traditional pizza crust. An egg crust is the perfect low carb and keto pizza crust.

We have a lot of eggs. A LOT. We actually have 20 chickens and we are literally swimming in eggs right now. The combination of the eggs cooked in the skillet and the toppings of gooey melted cheese and pepperoni is AMAZING! It eliminates any cravings that I have, and because of the protein keeps me full so I don't eat any more!

Traditional pizza is loaded with carbs from the crust. Of course traditional pizza obviously tastes good, but I was looking for an low carb EASY substitute that I could whip togther in a couple of minutes. The best part is that you don't even have to roll out dough, you just whisk your eggs and pour in the pan. Super easy!

Ingredients and Tools

This keto pizza with egg crust only requires a few simple ingredients that you can find anywhere (or probably already have).

Here are the ingredients that you will need:

  • 1 tablespoon olive oil
  • 2 eggs
  • 1/8 teaspoon salt
  • 1/4 teaspoon Italian seasoning
  • 1-2 tablespoons of pizza sauce (if on a keto diet, make sure it is sugar free)
  • 1/4 cup mozzarella (whole milk), grated
  • 5 to 6 slices of pepperoni

Okay, this is so easy and good you will wonder why you have never made this before! 🙂 When I made these eggs with pizza sauce I was so surprised at how well they went together. So delicious.

This egg pizza recipe with pepperoni and cheese is very easy to make.Here are the steps to make this super delicious pizza eggs recipe:

Assemble Your Ingredients

Prep and assemble your ingredients.Set your oven to broil.Heat olive oil in an 8" cast iron skillet over medium heat.

Whisk The Eggs And Seasoning

Wisk eggs, salt, dash of pepper, and italian seasoning in a bowl.

Cook Your Egg Crust

I can't wait for you to try this egg crust pizza!

Pour mixture into hot pan and cook until eggs start to set (approximately 2 minutes).

Life the edges of the eggs carefully and flip them over. Immediately turn heat off.

The eggs do not have to be completely set on top (see picture below, where they are slightly runny). The cast iron skillet will stay hot and continue to cook the eggs while you add the toppings in the next step.

Add Your Toppings

Top with marinara, mozzarella cheese, then pepperoni (or any other pizza ingredients that will heat fast).

Note that mushrooms, peppers, onions will not work well unless they are pre-cooked. They aren't under heat long enough to cook through.

Broil Until Bubbly

Place pan under broiler for 1 to 2 minutes until cheese is bubbly (be careful not to burn)

Serve

You can serve on a plate or eat it right out of the pan (like I do)!

  1. Assemble all of your ingredients in advance.
  2. Using an 8" cast iron skillet (or other ovenproof pan), heat olive oil over medium heat.
  3. Set your oven to broil.
  4. Wisk eggs, salt, dash of pepper, and italian seasoning in a bowl.
  5. Pour mixture into hot pan and cook until eggs start to set (approximately 2 minutes).
  6. Life the edges of eggs to loosen, then flip eggs over. Immediately turn heat off, then top with marinara, mozzarella cheese, and pepperoni.
  7. Place pan under broiler for 1 to 2 minutes until cheese is bubbly (be careful not to burn)
