🧾 Ingredients

Cardamom Quick Bread (Tasty Easy Recipe) - Heavenly Home Cooking (2)
  • 2⅓ cups white all-purpose flour.
  • 1 teaspoon ground cardamom.
  • 1 teaspoon ground cloves. Do you want to transform this recipe into a delicious cinnamon cardamom bread? Simply swap the cloves with ½ teaspoon of ground cinnamon instead. Yum!
  • 1 teaspoon baking soda. Leavening agent. Baking soda works with the buttermilk to cause the bread to rise.
  • 2 large eggs. Binding agent. Holds the batter together. To make an eggless version, you can substitute a couple of tablespoons of flaxseed meal, ¼ cup silken tofu or almond butter. Please refer to this chart for guidance on egg substitutions in baked goods.
  • 1 cup white granulated sugar. Adds sweetness. For a no sugar option, substitute one cup of Swerve sugar replacement.
  • ½ cup safflower oil. Or another vegetable oil like canola oil. Liquified coconut oil will work as well.
  • 1 cup buttermilk. If you do not have buttermilk, you can substitute a cup of regular milk and add a tablespoon of lemon juice or white vinegar. You can also substitute one cup of plain yogurt for the buttermilk.
  • ¼ teaspoon salt. Enhances flavor.

📔 Instructions

Step 1. Preheat oven to 350°F (176°C). Grease and flour a 9 x 5 inch loaf pan or spray with baking spray. Set aside.

❓ Frequently Asked Questions

Why is this bread considered a "quick bread"?

This bread is a quick bread because it can baked immediately after mixing the batter. Its leavening agent (the ingredient that causes it to rise), in this case baking soda, does not require the proofing (time required for the dough to rest and ferment before baking) that a yeast dough requires.

How do I store this bread?

Wrap it tightly in aluminum foil. It will keep in your pantry for 1-2 days, in your refrigerator for up to a week and in your freezer for up to 3 months. Please see the frequently asked questions in our post for maple syrup bread for more detailed information about how to store a homemade quick bread.

What does salt do in quick bread?

The salt enhances the other flavors going on in this quick bread - in this case cardamom and cloves. If you do not include it, this bread will end up tasting bland.

FAQs

Which ingredient gives richness and flavor to quick breads? ›

Fats are added for richness and flavor, and when creamed with sugar, they trap air creating lightness in the batter. Sugar, in addition to its interaction with fats, adds flavor, color, and aids in the tenderization of the batter.

What are the 7 basic ingredients in quick bread? ›

The possibilities are endless, but the common factor is the basic ingredients of fat, sugar, eggs, flour, liquid, leavening agent, and a flavoring ingredient. The flavoring might be a fruit or vegetable, a liquid such as buttermilk or fruit juice, an extract, herbs, or spices.

What does baking powder do in quick bread? ›

As with baking soda, the purpose of baking powder is to create air bubbles that give your baked goods their light, airy texture. There are two types of baking powder: single action and double action. Single action baking powder creates the carbon dioxide bubbles upon contact with moisture, similar to baking soda.

What is the secret for mixing quick bread? ›

Add liquid ingredients to dry ingredients all at once. Using a wooden spoon, mix just until the dry ingredients are moistened, 15 to 20 light strokes. There should be some small lumps. Overmixing can cause quick breads to be tough, bake unevenly or cause elongated holes (or tunnels).

What makes bread super soft and fluffy? ›

Milk powder.

Instant milk powder makes bread dough super soft and fluffy and also helps to give it a good rise. It also contributes to the dough staying nice and soft after baking for a little longer than a recipe that does not use milk powder.

What is the most common liquid used in quick breads? ›

The most common liquid ingredients in quick breads are milk and water. The liquid moistens the batter, helps activate the gluten in the flour, and dissolves the sugar in the recipe.

What do eggs do in quick bread? ›

The extra air that the egg whites have incorporated expands as the bread or muffins bake, making them lighter, fluffier, and “taller”! Yup… SO SIMPLE!

What happens if you leave an egg out of bread? ›

Bread with no egg looked as normal as any other white loaf. It had puffed up evenly and had a nice crust colour and a soft texture. The interior was soft but quite tight. This could be made lighter by skipping the pre-shaping or folding steps making the dough looser.

Which ingredient causes a quick bread to rise? ›

The two main quick-acting leavening agents are baking powder and baking soda Salt: Used as a seasoning Liquid: Helps in the blending of dry ingredients and the formation of gluten. It triggers the leavening action of baking powder or baking soda. Sugar: Makes quick breads tender and adds flavor.

How can you tell when a quick bread is done baking? ›

Inserting a toothpick into the center of a baked good is a tried and true method to test for doneness. If the toothpick comes out clean, your bread is likely fully baked. It needs a bit more time if it comes out wet with dough or crumbs.

What makes bread fluffy baking soda or powder? ›

Baking soda changes the texture of baked goods by causing a batter or dough to spread, while baking powder produces light, fluffy texture. Some recipes may call for baking soda or baking powder on their own, while others may require both ingredients to create the ideal balance for great texture.

Why is my quick bread so heavy? ›

A close, dense textured quick bread indicates the batter was overmixed, the dough was too wet or dry, the oven was too hot, or the bread wasn't baked long enough.

Does letting bread rise longer make it fluffier? ›

Does Rising Bread Affect Its Texture? For a fluffy bread texture, the key is to let the bread rise long enough.

What causes richer flavor in bread? ›

What ingredient adds flavor to bread? ›

Sweeteners such as malt and honey are used to add flavor to bread dough. Malt, which is available in powder and liquid form, can be added to almost any bread.

What gives bread the best flavor? ›

The result is soft, decadent bread that is excellent alongside your morning coffee, essential for making the most desirable French toast, and perfectly paired with savory meats and cheeses.
